Overview of the issue
When you send order completed e-mail it might be sent in the default site’s language or current admin language.
Workaround
Our developers are working on fixing this.
For now, you can try to use this workaround:
If the order is in German, go to WordPress dashboard, and switch language with the admin language switcher.
Then go to the order and mark it as completed.
